Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
3/4 c. flour
2/3 c. pumpkin
1 tsp. cinnamon
1 tsp. baking soda
chopped nuts
powdered sugar
8 oz. soft cream cheese
1 c. powdered sugar
1/2 tsp. vanilla
4 Tbsp. butter
Preparation

Prepare jelly roll pan by greasing pan, inserting waxed paper and then greasing paper.
Beat eggs and sugar for 5 minutes.
Add pumpkin, flour, cinnamon and baking soda.
Pour pumpkin mixture into pan, sprinkle with nuts and bake at 350 degrees for 15 minutes.
Turn onto towel lightly coated with powdered sugar. Remove wax paper.
Roll up cake with towel and let cool.
Prepare filling by combining cream cheese, 1 c. powdered sugar, vanilla and butter. Beat until smooth.
Unroll cake and spread filling. Roll up (without towel) and refrigerate.
May be frozen.
