Apricot Sweet Potatoes - cooking recipe

Ingredients
    3 lb. sweet potatoes
    1 1/2 Tbsp. cornstarch
    1 c. apricot nectar
    1 tsp. cinnamon
    1 stick oleo
    1 1/2 c. brown sugar
    1 can apricot halves
    1/2 c. pecan halves
    1/4 c. orange juice
Preparation
    Drain potatoes and arrange in buttered casserole.
    Mix brown sugar, cornstarch, apricot nectar and juice of apricots. Bring to a boil and boil for 2 minutes.
    Add orange juice, cinnamon, pecans and 1 stick oleo. Stir until
    melted.
    Add apricots and spoon mixture over potatoes.
    Bake 3 hours in 300\u00b0 oven or until syrup is thick.
