Black Bean Salad - cooking recipe

Ingredients
    1 c. dried black beans
    1 (10 oz.) pkg. frozen corn, thawed
    1 medium size green pepper, chopped
    1 medium size sweet red pepper, chopped
    1 jalapeno pepper, seeded and chopped
    3 green onions, thinly sliced
    2 Tbsp. minced fresh parsley
    2 Tbsp. olive oil
    3 Tbsp. fresh lime juice
    salt and pepper to taste
    lettuce leaves
Preparation
    Sort and wash beans; place them in a large saucepan.
    Cover with water 2 inches above beans; let soak at least 8 hours.
    Drain beans and cover with fresh water; cook 1 hour or until tender. Drain well and let beans cool.
    Combine beans, corn, green pepper, red pepper, jalapeno pepper, green onions and parsley in a large bowl.
    Add olive oil, lime juice, salt and pepper; stir gently to combine.
    Serve on lettuce leaves, if desired.
    Serves 6.
