Couscous Salad - cooking recipe

Ingredients
    1 small cucumber
    1 medium tomato
    1 medium carrot
    1/2 cup quick cooking couscous
    2 Tbsp. sliced green onion
    2 Tbsp. sliced pitted ripe olives
    1/3 cup reduced calorie Italian salad dressing
Preparation
    Chop cucumber and tomato. Slice carrot. In a medium bowl, combine cucumber, tomato, carrot, uncooked couscous, onion and olives. Pour salad dressing over the vegetables. Cover and chill for 1 - 1 1/2 hours. To serve, spoon vegetable mixture into lettuce lined bowls. Serves 6.
