Potato Candy - cooking recipe

Ingredients
    2 small baked potatoes (cooled)
    1 1/2 to 2 boxes confectioners sugar
    1 tsp. vanilla
    crunchy peanut butter
Preparation
    Peel potatoes; mash in large mixing bowl.
    Add sugar and vanilla gradually until mixture is consistency of dough.
    Roll out on wax paper.
    Spread generously with peanut butter.
    Roll into a log chill several hours or overnight.
    Slice and serve.
