Kentucky Burgoo - cooking recipe

Ingredients
    3 Tbsp. bacon fat
    1 lb. beef bones with meat
    1/2 lb. veal
    1 chicken, quartered
    2 qt. water
    2 tsp. salt
    2 c. chopped onions
    1 clove garlic, chopped
    1 c. diced potatoes
    4 diced stalks celery
    1 lb. tomatoes
    3 diced carrots
    1 chopped green pepper
    1/2 pt. butter beans
    1/8 tsp. red pepper
    1 onion, stuck with 2 cloves
    1 bay leaf
    2 tsp. brown sugar
    1/4 tsp. pepper
    1 c. sliced okra
    1 thawed pkg. frozen corn
    1/4 c. butter
    1/2 c. flour
    1/2 c. chopped parsley
Preparation
    In a pot, combine 2 tablespoons bacon fat, beef and veal. Cook until browned.
    Add chicken, water and salt.
    Cover; cook slowly until tender.
    Remove meat and chicken.
    Discard bones and cut meat and chicken into fairly large pieces.
    Return chicken and meat to broth.
    In a frying pan, combine remaining fat and onions. Cook until tender; add to broth.
    Add garlic, potatoes, celery, tomatoes, carrots, green pepper, beans, red pepper, onion with cloves, bay leaf, brown sugar and pepper.
    Cook slowly, stirring occasionally for 2 hours.
    Add okra and corn; cook for 15 minutes. In a bowl, combine butter and flour. Blend into burgoo. Sprinkle with parsley.
    Serves 10.
