Broiled Lemon Chicken Sandwiches With Garlic Mayonnaise - cooking recipe

Ingredients
    3 large cloves garlic (skin on)
    1/4 c. low-fat mayonnaise
    1 tsp. finely grated lemon zest
    fresh ground black pepper to taste
    2 small skinless, boneless chicken breasts
    2 tsp. olive oil
    4 Tbsp. fresh lemon juice
    salt and pepper to taste
    4 buns or Kaiser rolls
    8 leaves Boston or bibb lettuce
Preparation
    Place garlic in small saucepan.
    Cover with water and bring to a boil.
    Reduce heat.
    Cook for 25 minutes.
    Drain; slip skins off. Mash and mix with mayonnaise, lemon zest and pepper.
    Refrigerate until ready to use.
    Preheat broil or ready outdoor grill.
    Cut breasts in half lengthwise, removing center cartilage.
    Fan out the little fillet on the underside of each breast and lay flat on baking sheet.
