Canyon Casserole - cooking recipe
Ingredients

1 lb. beef
1 (14.5 oz.) can diced tomatoes, drained
1 (7 oz.) can whole kernel corn, drained
1/2 c. water
1 (1 1/4 oz.) pkg. taco seasoning mix
1 c. self rising flour
1/2 c. milk
2 Tbsp. oil
1 egg
I cup shredded cheddar cheese
Preparation

Heat oven to 400.
Grease 8 inch square glass baking dish. Brown ground beef in a large skillet over medium-high heat until thoroughly cooked, stirring frequently.
Drain.
Add tomatoes, corn, water, and taco seasoning mix.
Mix well.
Bring to a boil, stirring occasionally.
Pour into the greased baking dish.
In a small bowl, combine corn meal mix, milk, oil, and egg.
Blend well.
Stir in cheese.
Pour batter over ground beef mixture in baking dish.
Bake at 400 for 30 to 35 minutes or until the topping is golden brown.
