Grated Raw Sweet Potato Pudding - cooking recipe

Ingredients
    2 eggs
    1 c. sugar
    1/2 c. melted butter
    3 c. grated raw sweet potatoes (reserve 1 c. for a brown crust)
    1/8 tsp. salt
    1 1/2 c. milk
    2 tsp. vanilla
Preparation
    Preheat oven to 350\u00b0.
    Beat eggs; add sugar, milk, butter, vanilla and salt.
    Add 2 cups potatoes.
    Place in 2-quart baking dish.
    Sprinkle reserved cup potato over top.
    Bake for 25 minutes.
    Serves 6.
    Serve with ice cream of whipped cream.
