Italian Easter Rice Pie - cooking recipe

Ingredients
    4 c. milk
    rind from 1 large lemon
    3 c. cooked rice
    3 Tbsp. cornstarch
    10 eggs, beaten
    2 c. sugar
    pinch of salt
Preparation
    Scald milk and add rind; bring to boil, take off heat.
    Mix sugar, cornstarch and salt.
    Add eggs to sugar mixture, then add cooked rice.
    Add warm milk and discard rinds.
    Pour into 2 crusts.
