Potato Pancakes - cooking recipe

Ingredients
    4 large potatoes, grated
    1/8 c. grated onion
    2 Tbsp. flour
    1 egg, slightly beaten
Preparation
    Keep grated potatoes covered with cold water until ready to mix to prevent discoloration.
    Mix all ingredients in a large bowl.
    Spoon into nonstick or lightly oiled skillet and cook as you would regular pancakes.
    Turn cakes when edges become lightly browned.
    Serve warm with applesauce (optional).
