Currant Jelly Glazed Pork Roast - cooking recipe

Ingredients
    4 to 6 lb. loin boneless pork roast, rolled and tied
    1 jar currant jelly (10 oz.)
    1/3 c. corn syrup
    2 Tbsp. cider vinegar
    1/2 tsp. dry mustard
    1/4 tsp. ginger
Preparation
    Place roast on rack in shallow roasting pan.
    Insert meat thermometer, so as bulb is in the center of thickest part of roast.
    Roast, uncovered, in 325\u00b0 oven for about 2 1/2 to 3 hours, until thermometer registers 170\u00b0.
    While roast is cooking, prepare glaze.
