Vidalia Sweet Onion And Squash Casserole - cooking recipe

Ingredients
    6 medium yellow squash, peeled and cut into slices
    4 medium Vidalia sweet onions, peeled and cut into slices
    3 Tbsp. water
    1 Tbsp. salt
    pepper to taste
    2 c. crumbs from Ritz crackers
    3 Tbsp. margarine, melted
Preparation
    Combine squash, onions, water, salt and pepper in saucepan. Cook over medium-high heat until water bubbles.
    Reduce heat to low; simmer for 10 minutes, or until squash is tender.
    Drain off excess water.
    Pour mixture into well-greased 2-quart casserole dish.
    Sprinkle with cracker crumbs.
    Drizzle margarine over crumbs.
    Bake in a 325\u00b0 oven for 20 to 25 minutes, or until golden brown.
    Makes 8 servings.
