Beet Relish - cooking recipe

Ingredients
    4 medium size beets
    1 c. vinegar
    1/2 c. sugar
    2 tsp. prepared horseradish
    1/4 c. chopped onion
    1/2 tsp. salt
Preparation
    Cook beets 35 to 40 minutes.
    Remove skins.
    Chop coarsely. In saucepan, heat vinegar, sugar and salt; stir until dissolved. Add other ingredients; boil 10 minutes, covered.
    Best if kept in refrigerator until used.
    Makes 1 1/2 cups relish.
