Ingredients

4 c. all-purpose flour
2 Tbsp. baking powder
1 1/2 tsp. salt
2 Tbsp. sugar
4 eggs, separated
2 1/2 c. milk
12 Tbsp. melted shortening
Preparation

Preheat waffle iron on medium.
Sift together dry ingredients. Beat egg whites and set aside.
Beat egg yolks and melted shortening.
Add dry ingredients and beat with mixer until smooth. Fold in beaten egg whites.
Makes 10 waffles.
