Three Cheese Manicotti - cooking recipe

Ingredients
    1 1/2 c. water
    1 (8 oz.) can tomato sauce
    1 pkg. spaghetti sauce mix
    2 c. shredded Mozzarella cheese
    1 c. Ricotta or cottage cheese
    1/2 c. grated Parmesan cheese
    2 beaten eggs
    1/4 c. snipped parsley
    1/2 tsp. salt
    6 to 8 manicotti shells, cooked and drained
    1 lb. ground beef, cooked and drained (optional)
Preparation
    In small saucepan, blend water, tomato sauce and spaghetti sauce mix.
    Simmer, uncovered, for 10 to 12 minutes.
    Meanwhile, combine 1 cup Mozzarella, the Ricotta or cottage cheese and the Parmesan cheese.
    Add eggs, parsley, salt and 1/8 teaspoon pepper; mix lightly.
    Add ground beef if desired.
