Cauliflower-Garlic Soup - cooking recipe
Ingredients

20 cloves garlic, peeled
5 c. chicken stock
1 large head cauliflower (8 c. flowerets)
salt and white pepper to taste
1 c. half and half
ground nutmeg
Preparation

Simmer garlic in stock in a covered pot 20 minutes.
Add cauliflower, salt and pepper and simmer another 30 minutes until vegetables are very tender.
Cool.
Puree in blender in batches and return to the stock pot.
Stir in half and half.
Taste and correct seasonings, if necessary.
Simmer to serving temperature. Top each serving with a sprinkling of nutmeg.
Serves 6.
