Pumpkin Cake Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
Preparation

Beat eggs on high speed for 3 minutes.
Gradually beat in sugar.
Stir in pumpkin and lemon juice.
Add remaining ingredients.
Spread on greased and floured jelly roll pan.
Top with chopped nuts (1 cup).
Bake at 375\u00b0 for 15 minutes.
Take out and turn out onto towel sprinkled with powdered sugar and roll like a log.
Let cool.
Unroll and spread with filling.
