Pot Roast Meat Loaf - cooking recipe

Ingredients
    1 1/2 lb. ground beef (lean)
    1 c. dry bread crumbs
    1 egg
    2 Tbsp. Worcestershire sauce
    2 Tbsp. soy sauce (optional)
    1/4 c. catsup
    1 tsp. salt
    2 tsp. pepper
    3 carrots, sliced
    3 medium onions, sliced
    3 medium potatoes, sliced
    1 1/2 c. shredded cabbage
    parsley flakes
Preparation
    Combine first 8 ingredients in large bowl.
    Shape mixture into a loaf in center of a 13 x 9 x 2-inch casserole dish.
    Place vegetables in layers around meat.
    Sprinkle each layer with parsley and black pepper.
    Cover casserole tightly with foil. Bake in preheated oven at 375\u00b0 for 1 hour or until vegetables are tender.
    Remove foil; bake 10 more minutes to brown meat.
