Hotel Pierre, New York, Saffron Rice - cooking recipe

Ingredients
    dash of powdered saffron
    1/2 c. hot water
    1/4 c. butter or margarine, melted
    1 1/2 c. uncooked rice
    1/4 c. chopped onion
    1/2 tsp. salt
    2 1/2 c. hot water
Preparation
    Dissolve saffron in 1/2 cup hot water.
    Combine the dissolved saffron, butter, rice, onion, salt and 1 cup of the hot water in a 1 1/2-quart casserole dish.
    Bake in hot oven (450\u00b0) for 20 minutes or until rice is very dry, stirring at end of 10 minutes. Stir in remaining 1 1/2 cups hot water, cover and return to hot oven for 15 minutes.
    Uncover and cook 5 minutes longer.
    Fluff with fork before serving.
    Makes 8 to 12 servings.
