Crab Cakes - cooking recipe
Ingredients

3 c. saltine crumbs, divided (2 c. and 1 c.)
2 large eggs, lightly beaten
1/2 c. diced onions
3 Tbsp. mayonnaise
1 Tbsp. prepared mustard
2 tsp. lemon juice
1/2 tsp. salt
3/4 tsp. pepper
1/8 tsp. red pepper
1/4 tsp. hot sauce
1 lb. fresh lump crabmeat, drained
2 Tbsp. butter or margarine
2 Tbsp. vegetable oil
Preparation

Stir together 2 cups cracker crumbs and next 9 ingredients. Fold in crabmeat. Shape into 8 (3-inch) patties; dredge in remaining 1 cup cracker crumbs.
