Apricot-Apple Muffins - cooking recipe
Ingredients

4 c. all-purpose flour
2 Tbsp. baking powder
3 Tbsp. brown sugar
dash of salt
2 eggs, slightly beaten
2 c. half and half
1 c. melted margarine
2 apples, unpeeled and grated
1 c. chopped apricots
1/2 c. bran cereal
Preparation

Mix flour, sugar, baking powder and salt.
In a separate bowl, stir together eggs, half and half and cooled melted margarine. Add apples, apricots and bran cereal to dry ingredients.
Add egg mixture to dry ingredients.
Stir only until moistened.
Do not overmix.
Batter should be lumpy.
Fill greased muffin tins about 3/4 full.
Bake at 375\u00b0 to 400\u00b0 for 15 to 20 minutes, until lightly browned.
Serve hot from oven.
