Split Pea Or Lentil Vegetable Soup - cooking recipe

Ingredients
    1 medium potato
    2 medium size carrots
    2 stalks celery
    1/2 small onion
    4 c. water
    1 tsp. oil
    1 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. lemon juice (optional)
    1 c. dry split peas, lentils, or dry beans
Preparation
    Wash and drain peas.
    Cut up potato, carrots, celery and onion.
    Bring water to boil in large saucepan.
    Add onion, split pea or lentils and oil.
    Cover and boil gently for 30 to 45 minutes or until peas are tender.
    Add potato, carrots, celery, salt, and pepper.
    Cook until just tender, 15 to 20 minutes.
    Stir in lemon juice if desired.
    Serve immediately.
