Squash Casserole - cooking recipe

Ingredients
    2 lb. yellow and/or green squash, sliced
    1 medium onion, finely chopped
    1/2 c. (1 stick) margarine, melted
    1 can cream of chicken soup
    1 grated carrot
    2 Tbsp. chopped pimento
    1 c. (8 oz.) sour cream
    1/2 c. (or more) grated Cheddar cheese
    8 oz. pkg. stuffing (herb-seasoned recommended)
Preparation
    Mix
    together
    all ingredients (except about 1/4 cup of stuffing
    mix)
    in
    large
    casserole dish.
    Sprinkle remaining stuffing over
    top
    and bake, uncovered, at 350\u00b0 until bubbly, approximately 25 minutes.
    Serves 6 to 8.
