Spanish Rice - cooking recipe

Ingredients
    2 1/2 c. cooked rice
    2 Tbsp. butter
    1 small onion, chopped
    1/4 c. chopped green pepper
    1/4 c. chopped celery
    2 c. canned or cooked tomatoes
    1/2 tsp. salt
    1/4 tsp. pepper
    1/3 c. grated sharp cheese
Preparation
    Heat 2 tablespoons butter in a skillet.
    Cook the onion, green pepper and celery for 5 minutes.
    Add the rice, tomatoes, salt and pepper.
    Bring to the boiling point.
    Simmer gently for 5 minutes. Add the cheese and serve at once.
    Serves 4.
