Salmon Fritters - cooking recipe

Ingredients
    1 can salmon
    milk
    1 c. buttermilk baking mix
    1 egg, slightly beaten
    1 tsp. lemon juice
    1/4 c. celery, chopped finely
    2 Tbsp. green pepper, chopped finely
    2 Tbsp. onion, chopped finely
    1/2 tsp. each: salt and pepper
Preparation
    Drain salmon, reserving liquid; flake.
    Add milk to salmon liquid to make 1/2 cup.
    Add this to baking mix with egg and lemon juice.
    Blend in salmon, vegetables, salt and pepper.
    Drop batter by spoonfuls into hot oil in deep fryer.
    Fry for about 3 minutes or until golden brown on both sides.
    Drain on paper towel.
