Fruit Kugel * - cooking recipe
Ingredients

1 (20 oz.) can crushed pineapple
3 peeled, grated apples
8 eggs, separated and at room temperature
2/3 c. sugar
1/2 c. vegetable oil
1/2 c. matzo meal
1 lb. pitted prunes, cut up
1 lb. box dried apricots, diced
Preparation

Combine pineapple, apples, oil, sugar and matzo meal.
Mix well.
Add beaten egg yolks.
Mix well.
Add prunes and apricots. Beat egg whites into peaks.
Fold into batter.
Pour into well-greased two-quart baking dish and bake for one hour and 15 minutes at 350\u00b0.
