German Potato Soup(Low-Fat) - cooking recipe

Ingredients
    2 potatoes, pared and diced
    2 carrots, pared and diced
    1 ripe tomato, peeled and diced
    1 small onion, peeled and minced
    4 c. water
    pinch of ground ginger
    salt and pepper to taste
    1 beef bouillon cube or substitute 1 can beef broth for part of the water (optional)
Preparation
    Combine ingredients in large saucepan.
    Cover and simmer until potatoes and carrots are very tender, about 20 to 25 minutes.
