Cranberry-Orange Bread - cooking recipe

Ingredients
    2 c. all-purpose flour
    1 c. quick Quaker oats
    3/4 c. sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt (optional)
    3/4 c. orange juice
    2 eggs
    1/2 c. vegetable oil
    1 Tbsp. grated orange rind
    3/4 c. chopped cranberries
    1/2 c. chopped nuts (optional)
Preparation
    Heat oven to 350\u00b0.
    Grease and flour bottoms of 9 x 5-inch loaf pan.
    Combine first 6 ingredients.
    Mix well and set aside. Beat orange juice and orange peel and eggs until well mixed.
    Add to dry ingredients. Mix just until moistened.
    Fold in cranberries and nuts and pour into prepared pan.
    Bake 60 to 70 minutes or until a wooden pick comes out of center clean.
    Cool 10 minutes, then remove from pan.
    Cool thoroughly before cutting.
    Makes 12 servings.
