Herb Butter Zucchini Fans - cooking recipe
Ingredients

1/3 c. butter or margarine, softened
2 Tbsp. minced fresh parsley
1/2 tsp. dried whole tarragon
1/8 tsp. salt
1/8 tsp. pepper
4 small zucchini
1/4 c. water
2 Tbsp. freshly grated Parmesan cheese
1 Tbsp. soft breadcrumbs
Preparation

Combine first 5 ingredients in a small bowl and set aside. Cut each zucchini into lengthwise slices, leaving slices attached at stem end.
Fan slices out and spread evenly with butter mixture.
Place in a 15 x 10 x 1-inch jellyroll pan; add water. Bake at 400\u00b0 for 20 minutes or until crisp-tender.
Combine cheese and breadcrumbs; sprinkle on zucchini and broil 4 inches from heat 2 minutes or until cheese melts.
Yield: 4 servings.
