Curried Beef Salad - cooking recipe

Ingredients
    3/4 lb. lean deli roast beef, sliced 1/4-inch thick
    1 large apple, cut into 1/2-inch pieces (1 1/2 c.)
    2 small peaches, cut into 1/2-inch pieces (1 c.)
    3/4 c. chopped celery
    1/4 c. chopped green onions
    1/3 c. low-fat sour cream
    1 tsp. curry powder
    Boston or leaf lettuce
Preparation
    Cut beef into 1 1/2 x 3/4-inch pieces.
    In large bowl, combine beef, apples, peaches, celery and onions.
    Mix lightly.
    In small bowl, mix mayonnaise, sour cream and curry powder until well blended.
    Add to beef mixture; toss to coat.
    Refrigerate at least 1 hour or until well chilled.
    To serve, arrange lettuce on platter.
    Spoon beef salad on top.
    Yields 4 servings, per serving about 305 calories, 9 g fat.
