Cream Of Potato Soup - cooking recipe

Ingredients
    4 medium white potatoes, peeled and quartered
    1 large carrot, peeled, shredded and chopped fine
    1 small onion, chopped fine
    2 Tbsp. butter
    2 Tbsp. flour
    2 c. milk
    salt and pepper to taste
Preparation
    Combine potatoes, carrots and onions.
    Cover with water and boil until tender.
    Rub through a coarse sieve, saving the stock. Prepare a thin
    white sauce with the butter, flour and milk;
    add to
    the
    vegetable stock.
    Reheat and season;
    beat with a rotary beater.
    Serve hot.
    Serves 6 to 8.
