Chicken In Herbs And Wine(4 Servings) - cooking recipe

Ingredients
    1 1/2 c. chicken broth
    2/3 c. dry white wine
    1/4 tsp. pepper
    1/2 tsp. salt
    2 tsp. tarragon
    2 large carrots, thinly sliced (add a few minutes early)
    2 large celery ribs, thinly sliced
    1 large or 2 medium onions, thinly sliced
    4 to 5 skinless, boneless chicken breast halves
    1 tsp. Dijon mustard
    1 Tbsp. chopped parsley (optional)
Preparation
    Combine chicken broth, white wine, pepper, salt, tarragon, carrots, celery and onions in a large, heavy saucepan or skillet. Simmer 10 minutes.
    Add chicken and simmer 10 to 15 minutes or until chicken is white through, but still moist.
    Remove chicken and vegetables with slotted spoon to heated platter.
    Stir Dijon mustard and chopped parsley into remaining broth and reduce liquid as desired.
    Ladle sauce over meat and vegetables or serve separately.
    Each serving of meat and vegetables contains approximately 225 calories.
