Barley (Tabbouleh) Salad - cooking recipe

Ingredients
    4 c. cooked barley
    1/4 c. extra virgin olive oil
    3 Tbsp. fresh lemon juice
    2 cloves garlic, finely minced
    1 c. fresh mint leaves, coarsely chopped
    1/2 c. fresh dill, chopped
    2 c. plum tomatoes, seeded and diced
    1/2 c. scallions, thinly sliced
    salt and pepper to taste
Preparation
    Toss cooked barley in a large bowl with the olive oil, lemon juice and garlic.
    Add the chopped mint and dill.
    Toss in tomatoes, cucumbers and scallions.
    Season with salt and pepper. Toss gently, but thoroughly.
    Let rest for 1 hour so the flavors can blend.
    Garnish with sprigs of mint or dill before serving. Serving Size:
