Roast Beef And Gravy(100 Portions) - cooking recipe

Ingredients
    40 lb. beef roasts
    3/4 c. salt
    1/3 c. pepper
    2 qt. celery stalks and tops, coarsely cut
    1 1/2 qt. onions, chopped coarse
    1/2 c. garlic salt
    12 bay leaves
Preparation
    Roast in oven at high temperature (450\u00b0) until brown.
    Add 3 quarts water and the rest of the ingredients.
    Then turn down oven to 300\u00b0 and cover roaster.
    May need to add water, if water is gone, during cooking.
    Cook until done.
    Take roast out of pan and cool 1/2 hour prior to slicing.
    This will firm it up.
