Low-Fat Fried Chicken - cooking recipe

Ingredients
    1 whole chicken breast, split and butterflied
    no-fat mayonnaise or egg white
    Progresso bread crumbs
    1 tsp. dried basil (use more if using fresh basil)
    1/2 tsp. fresh rosemary (optional)
    salt and pepper
    1 tsp. olive or canola oil
Preparation
    Bone chicken breast, split and butterfly each piece or put between wax paper and hammer thin.
    Spread each side of chicken with light covering of mayonnaise or dip in egg white.
    Mix herbs (chopped, if fresh) with bread crumbs and roll chicken pieces until well covered.
    Spray a nonstick wok or fryer with nonfat cooking spray.
    Put on medium heat and add oil.
    Fry chicken approximately 3 minutes on each side or until golden brown.
    Good topped with a little salsa for garnish.
    Serves 2.
