Ingredients
    4 large potatoes *
    1 tsp. salt (scant)
    2 Tbsp. flour
Preparation
    *My great-grandmother used to pare the potatoes, then grate them.
    My mother found it far easier to put the potatoes through a fine food chopper.
    If the skins are not tough, scrub them and do not peel.
