Chicken-Spinach Manicotti - cooking recipe

Ingredients
    1 Tbsp. olive oil
    6 oz. fresh mushrooms, chopped
    2 c. cooked chicken, skin removed
    1/2 c. well-drained, thawed chopped spinach
    1/3 c. freshly grated Parmesan cheese (Romano)
    1 egg or 2 egg whites
    freshly ground pepper
    12 manicotti tubes or lasagna noodles
Preparation
    Saute mushrooms in olive oil over high heat, stirring frequently.
    Add chopped chicken and spinach and remove from heat. Set aside to cool while cooking the manicotti or lasagna in boiling water.
    When just tender, drain and rinse in cool water.
    Finish filling noodles and roll up or use a teaspoon to stuff each tube of manicotti.
    Place in an oiled 11 x 7-inch shallow baking dish. Have oven heated to 375\u00b0.
