Ingredients

1/4 c. cornstarch
2/3 c. plus 6 Tbsp. sugar
1/4 tsp. salt
2 c. milk
3 slightly beaten egg yolks
2 Tbsp. butter
1/2 tsp. vanilla
1 pkg. vanilla wafers
1 lb. bananas
3 egg whites
Preparation

Mix cornstarch, 2/3 cup sugar and salt; gradually add milk. Cook in double boiler until thick, about 10 minutes, stirring constantly. Slowly add small amount of hot mixture to egg yolks, then stir into remaining hot mixture. Cook 5 minutes. Remove from heat; add butter and vanilla. Cool.
Place alternately a layer of vanilla wafers, sliced bananas and pudding in baking dish. Spread with meringue made by beating egg whites until foamy, then add remaining sugar gradually, beating until stiff. Spread over pudding. Bake in 450\u00b0 oven until browned, about 5 minutes. Yields 6 to 8 servings.
