Deer Bologna - cooking recipe

Ingredients
    30 lb. ground meat
    1 lb. Tender Quick (made by Morton salt)
    1 Tbsp. coriander
    4 Tbsp. black pepper
    2 c. brown sugar
    approximately 1 Tbsp. garlic powder (optional)
    1 1/2 Tbsp. ground mustard
    1 1/2 Tbsp. mace
    1 tsp. cayenne pepper (optional)
Preparation
    Mix all spices together in a large bowl.
    Grind meat and spread out on table.
    Sprinkle spices over meat evenly until all is used. Then mix together with hands, mixing well.
    Grind it again. Stuff into muslin bags.
    Let hang where cool or put in the refrigerator for 24 hours.
    Bake at 200\u00b0 for 3 hours.
