Huevos Rancheros - cooking recipe
Ingredients

4 corn tortillas
2 or 3 Tbsp. corn oil
4 eggs
salt and pepper
1 c. red or green salsa
1/2 c. shredded white or Longhorn cheese
Preparation

Heat oil in skillet; fry each tortilla until crisp.
Drain. Have the shelled eggs ready to slip in pan.
Cook until whites are set.
Season with salt and pepper.
Place one egg on each tortilla.
Heat salsa; pour over eggs and top with cheese.
Serve with refried beans and a mound of chorizo.
Serves 2 to 4.
