Red Beans And Rice - cooking recipe

Ingredients
    2 c. red beans
    1 piece garlic, chopped
    1 medium onion, chopped
    salt and pepper to taste
    3 Tbsp. Crisco
    optional meats added to beans (cooked sausage or ham, chunk size or hot link sausage)
Preparation
    Sort through beans, picking out and throwing away the bad ones. Put beans in pressure cooker pot and cover with water 2 inches above beans.
    Bring to a boil.
    Shut off burner and let beans sit for an hour.
    Drain water and add fresh water to an inch above beans.
    Add garlic, onion, seasonings, meat and 3 tablespoons Crisco shortening.
    Cover with lid and cook on 15 pounds of pressure for 20 minutes.
    Serve over cooked rice.
    Add some cornbread for a delicious Southern meal.
