Romaine And Orange Salad - cooking recipe
Ingredients

1 Tbsp. grated orange peel
2 Tbsp. lemon juice
1 Tbsp. olive or salad oil
1 Tbsp. balsamic vinegar or red wine vinegar
1/2 tsp. pepper
1/2 head romaine lettuce, torn into bite-size pieces (6 c.)
2 oranges, sectioned
1 small red onion, cut into thin slices
1/2 small avocado, sliced
2 Tbsp. Parmesan cheese
Preparation

In large bowl, combine orange peel and next 4 ingredients.
Add romaine, oranges, onion and avocado slices.
Gently toss to coat with dressing.
Sprinkle with Parmesan cheese 15 minutes before serving.
Serves 6.
