Eggplant Pie - cooking recipe
Ingredients

2 large eggplant
2 Tbsp. margarine
1 or 2 chopped onions
1 beaten egg
2 Tbsp. (level) flour
2 Tbsp. milk
4 to 6 oz. grated cheese
salt and pepper to taste
1/4 to 1/2 ??? each sage and allspice
bread crumbs
Preparation

Chop, boil, drain and mash eggplants.
Saute onions in margarine and add to eggplant mixture.
Mix in egg, flour and milk.
Add cheese and spices.
Place in greased baking dish.
Add rest of cheese to top, then bread crumbs and dot with margarine. Bake at 350\u00b0 for 30 to 45 minutes.
