Lemon Meringue Pie - cooking recipe
Ingredients

1 c. sugar
3 Tbsp. cornstarch
1/4 tsp. salt
2 c. milk
4 eggs, separated
1 tsp. grated lemon rind
3 Tbsp. butter or margarine
1 baked 9-inch pie shell
1/2 tsp. cream of tartar
1/4 c. plus 2 Tbsp. sugar
1/2 tsp. vanilla
Preparation

Combine 1 cup sugar, cornstarch and salt in heavy saucepan. Gradually add milk, stirring until blended.
Cook over medium heat until mixture thickens and comes to a boil.
Boil 1 minute, stirring constantly.
Remove from heat.
Beat egg yolks until thick and lemon colored.
Gradually stir about 1/4 of hot mixture into yolks, add to remaining hot mixture, stirring constantly.
Cook over medium heat 2 to 3 minutes.
Remove from heat; stir in lemon rind, lemon juice and butter.
Spoon into pie shell.
Beat egg whites and cream of tartar 1 minute.
Gradually add 1/4 cup plus 2 tablespoons sugar, slowly beating until stiff.
Add vanilla.
Bake at 350\u00b0 for 12 to 15 minutes.
