Chocolate Pecan Caramels - cooking recipe

Ingredients
    1 Tbsp. plus 1 c. butter (no substitutes), softened and divided
    1 1/2 c. coarsely chopped pecans, toasted
    1 c. (6 oz.) semi-sweet chocolate chips
    2 c. packed brown sugar
    1 c. light corn syrup
    1/4 c. water
    1 (14 oz.) can sweetened condensed milk
    2 tsp. vanilla extract
Preparation
    Line a 13 x 9 x 2 pan with foil; butter the foil with 1 tablespoon butter.
    Sprinkle with pecans and chocolate chips; set aside.
    In heavy saucepan over medium heat, melt remaining butter. Add brown sugar, corn syrup and water.
    Cook and stir until mixture comes to a boil.
    Stir in milk.
    Cook, stirring constantly, until a candy thermometer reads 248\u00b0 (firm ball state).
    Pour into prepared pan (do not scrape saucepan).
    Cool completely before cutting.
    Yield: about 2 1/2 pounds.
