Cornbread Skillet Casserole - cooking recipe
Ingredients

2 eggs, slightly beaten
2 tsp. baking soda
1 (17 oz.) can creamed corn
1/4 c. vegetable oil
2 c. shredded Cheddar cheese
2 to 3 jalapeno peppers, chopped
1 c. yellow corn meal
1 tsp. salt
1 c. milk
1 lb. ground beef
1 large onion, chopped
Preparation

Combine the first 7 ingredients in bowl; set aside.
Cook beef until browned; drain well and set aside.
Pour half of cornmeal mixture into greased 10-inch skillet.
Sprinkle evenly with beef. Top with cheese, onion and peppers.
Pour remaining batter over top.
Bake at 350\u00b0 for 45 to 50 minutes.
Let stand 5 minutes before serving.
Serves 6.
