Apple Cherry Crunch(Diabetic) - cooking recipe

Ingredients
    3 medium cooking apples, peeled and chopped
    1 can pie cherries (packed in water)
    2 Tbsp. cornstarch
    3/4 c. apple juice concentrate, divided
    1/4 c. plus 2 Tbsp. granulated fructose, divided
    2 tsp. almond flavoring
    1 c. rolled oats
    2 tsp. cinnamon
    1/3 c. melted oleo
    nonstick vegetable cooking spray
Preparation
    Preheat oven to 350\u00b0.
    Place chopped apples in medium bowl. Drain cherries; save juice.
    Add cherries to apples; set aside. In small saucepan combine cherry juice, cornstarch, 1/2 cup apple juice concentrate and 1/4 cup fructose.
    Stir over medium heat until thickened.
    Add almond and pour over fruit.
    Pour fruit mixture into 2-quart casserole which has been sprayed with vegetable spray.
