Dolly O'Neill'S Spinach Balls - cooking recipe
Ingredients

2 (10 oz.) pkg. frozen chopped spinach
1 c. grated Parmesan cheese
1 c. Ricotta cheese
1 1/2 c. dried bread crumbs
4 eggs, beaten
5 Tbsp. oil
salt and pepper to taste
1/4 c. flour
Preparation

Cook and drain spinach well.
Mix all the other ingredients with the spinach.
Add oil, salt and pepper.
Take a teaspoon of mixture and roll into balls.
Dredge in flour to coat.
After all the balls are made, drop into large pot of boiling water.
Watch closely.
When they pop to the top, they are done.
Remove with a slotted spoon.
Can be served alone or with pasta sauce.
