Lucky Cajun Peas For New Years Day - cooking recipe

Ingredients
    1 lb bacon chopped into 1/2 in pieces
    1 large onion chopped (about 1 cup)
    1 medium green bell pepper, cored, seeded, chopped (about 1 cup)
    4 medium ribs celery, trimmed, chopped (about 1 1/4 cups)
    4 cloves garlic minced
    2 tsp dried crumbled thyme
    1 lb dried black-eyed peas
    1 tsp ground black pepper
    1/4 tsp cayenne pepper (less depending on how hot you like things)
    6 c chicken stock
Preparation
    In large 6-quart pot, cook bacon till cooked through. Add onion, green pepper, celery and garlic and cook 7-10 minutes or until vegetables are soft. Stir in black-eyed peas, thyme, black pepper, cayenne and chicken stock. Reduce heat to medium-low. Cook, covered, until peas are tender enough to fall apart and liquid is soupy, about 1 1/2 hours. Stir often to prevent sticking.
